Our Winemaking

Experience the allure of Cavallo Winery, a standout among wineries in BC. Indulge in the finest flavors Napa Valley has to offer. Our grapes are selected from premium vineyards in Napa Valley. After harvest, the white grapes undergo a gentle pressing, and the juice is transported to our facility. For our reds, the whole grapes are transported in temperature controlled trucks within 24 hours of being harvested. Every subsequent stage of winemaking takes place on-site at Cavallo Winery. Upon arrival, the grapes are processed, and our winemaking team starts the fermentation. Following fermentation; the reds are then aged in barrels, while the whites are bottled.

Our Vineyards

Our winemaking approach is marked by the freedom to choose the best vineyards based on their specific climate and terroir. As a commercial winery that imports grapes from California, we enjoy the luxury of selecting our grapes depending on the type and style of wine we want to produce. Our vineyard selections include George the Third Vineyard in Rutherford, Los Amigas Vineyard in Los Carneros, Atlas Peak, and Stagecoach Vineyards on Pritchard Hill. For example, our Pinot Noir, sourced from the breezy vineyards of Los Carneros, reflects a cooler and lighter style with a pronounced ocean influence. On the other hand, our Cabernet Sauvignon is harvested from Atlas Peak, a mountain 1900 ft above sea level. This elevation allows for a warmer growing season, and a longer ripening period, resulting in the bold, full-bodied wines that California is renowned for. Each bottle captures the essence of each location, and can be seen in the diverse flavor profiles in every glass of wine.
